Vegan Choc Chip Banana Bread || Healthier Sweet Treats

I love to bake and enjoy eating the results, so bonus points when I find a sweet treat that isn't too laden with sugar and butter and things that generally aren't too great for you but actually still taste good!
Read on below for the recipe I loosely based it on this recipe but made a few tweaks! Let me know if you try it and how yours turned out! Also I do apologise that are all the measurements are in the American 'cup' style, I don't know how to convert it to oz/g but I use some russian doll style cup measurements that measure out 1 cup, 1/4, 1/3 cup etc and can be picked up cheaply in most supermarkets.

Healthy Choc Chip Banana Bread

Ingredients
1/3 cup vegetable oil
3 tbsp maple syrup
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp ground cinnamon, plus a bit extra for top
3/4 cup rolled oats
1 cup white or wholewheat flour
1 tsp baking powder
1/4 cup water 
3 mashed bananas
150g dark chocolate chips (or a bar chopped up)

Feel free to add any extra chopped nuts of your choice, raisins, banana chips... 😋
Method
1. Preheat oven to 160 C (fan oven) and line a loaf tin with greaseproof paper.
2. In a blender or food processor, blend the oats until they are more flour-like, set aside in a large mixing bowl and add the flour, baking powder, cinnamon and salt to it.
3. Add bananas, oil, maple syrup, vanilla extract and water to the food processor and blend gently until smooth.
4. Add the wet banana mix to the flour mix and gently fold until nearly combined then add the chocolate chips (nuts, raisins etc at this point also), and again fold until everything is mixed (don't over mix).
5. Pour mix into the loaf tin and sprinkle the top with cinnamon and swirl the top layer gently with the tip of a butter knife or cocktail stick to make a marbled effect. Bake for 50-55 minutes, check it is fully cooked by inserting a skewer or fork and see if it comes out clean.
6. Let cool in the tin for 10 minutes then transfer to a cooling rack. Slice and enjoy!

Can be eaten hot or cold with or without butter, I put a big ole dollap of Whole Earth smooth peanut butter on mine whilst it was fresh out of the oven - there is no better combination than banana, peanut butter, dark chocolate and a cup of Yorkshire tea in my eyes! 🤤 Definitely guilty of having a slice for breakfast!
