Continuing my '4 Ways' series, read on for healthy meal ideas for lunch or tea that are super easy and quick to prepare and cook, can be taken to work/school with you or whipped up when you get home!
1 // Quinoa & Veggie Buddha Bowl
This is known as a 'Buddha Bowl' because you can throw anything you want in it and pile it up high creating a shape resembling Buddha's belly! Can easily be made vegan by removing the cheese or non-vegetarian by adding chicken or fish, some great additions would be sun-dried tomatoes, grilled halloumi, roasted sweet potato, grated carrot, beetroot, red onion, swapping quinoa for cous-cous, rice or bulgar wheat - anything goes! Great warm or cold so can be easily prepared night before for a packed lunch using up whatever is in your fridge, it's a great healthy and filling meal!
2 // Vegetable Massaman Curry
Served with steamed rice and roasted peanuts on top, can also be made with beef, chicken or tofu as the Thai's traditionally do. A great thing about making curry and other big pot dishes too, is if you're not feeding a whole family I like to place the extra portions into individual tuppaware containers and freeze them. Then you simply defrost and reheat the next time you want to eat it in the next few weeks and the extra food doesn't go to waste and you have less cooking to do that day!
3 // Pea, Spinach & Mint Soup
Super nourishing and full of spinach! I also often freeze this in batches and defrost when needed.
4 // Grilled Halloumi & Bell Pepper Sweet Chilli Wrap
