We had a glimpse of the sun but hopefully it will be back and ice lollies are the perfect refreshing sweet treat but don't have to be full of added sugar and cream - read on for a healthier version!
These are super easy to make and you only need a few ingredients:
In a food processor, blend pulp of 2 chopped mangos or equivalent in frozen mango (roughly 2 small handfuls). To the processor whilst it is still running, slowly pour in coconut milk - I just used tinned coconut milk that you can get for really cheap and easily in any supermarket. You can add as much coconut milk as you like if you'd prefer a creamier ice lolly I added around 3/4 of a tin. Pour mango mixture into ice lolly moulds and place in freezer for at least 4 hours. If you don't like coconut milk you can use plain water or almond/rice milk to blend to keep it sugar and dairy free, or you can experiment with other fruits and make lots of different healthy real fruit ice lollies!
