Tropical Fro-Yo Granola Bites
These are so quick and easy to make, perfect alternative instead of reaching for ice-cream after dinner! All you need is some cupcake cases, full fat plain yoghurt, fruit of your choice and some granola.
Add 1-2 tablespoonfuls of yoghurt to the bottom of each case, place your fruit on top and then sprinkle with the granola. Transfer to the freezer (I put mine into a lunchbox so they stayed steady) for a few hours then take out around half an hour before when you'd like to eat them and enjoy!
I used frozen mango and pineapple pieces but any fresh or frozen fruit will work, berries would be a great addition. I also sprinkled desiccated coconut on top as well as the granola, you can just use coconut or chopped nuts/seeds if you don't have any granola or any topping you like!
Rocky Road Bites
These aren't the healthiest thing in the world but switching a few ingredients from traditional rocky road does make them better for you with higher nutritional value. First of all using a chocolate that is good quality and high percentage of cocoa solids is a better alternative, as cocoa naturally is high in magnesium, flavonoids and tryptophan so more cocoa content in your chocolate the better it actually makes you feel! Here I've used a raw, vegan and organic chocolate from Conscious Chocolate. Adding in extra nuts and seeds rather than biscuits will give essential minerals such as selenium, zinc and magnesium.
